You’ll begin the class by learning the best kept secrets for authentic New Orleans cooking. We begin by discovering the importance of the Cajun Holy Trinity, and start cutting and prepping to make the best New Orleans cuisine you’ve ever tasted.
Once the Cajun Holy Trinity is all chopped, we will take a break and get our first glass of wine. Mise en place (everything in its place), we start the Dark Roux for the gumbo. After the gumbo, we start the light Roux for the Shrimp Etouffee. After properly plating your meal, it's time to dine.
The last part of the class, (and possibly your favorite) will include teaching you how to make Bananas Foster. Yum! We’ll show you a fool-proof way to make this dessert that is sure to impress your friends and family.

My husband and I love to cook, and often attempt Cajun and creole food because we love visiting New Orleans. But we could never get a proper roux going, always too intimidated! The roux class with chef David was awesome, and we are much more confident now. We got some tips on knife skills, a great rundown of the history of the area, talked food-nerd stuff, and helped make (and eat) some fantastic dishes. We are so glad we decided to take the class and have been recommending to friends and family!

My girlfriends and I thoroughly enjoyed the whole experience. It was a very causal night, like you were in someone's home for food and drinks, and our chef, David was the best. We laughed so much at his stories. He is a great storyteller as well as a great chef and the food was so delicious.

My daughter and I loved this class (it was her favorite part of the trip and we had a lot of fun at the French Quarter Festival). Perfect size - my daughter and I and another couple who were fun to meet! Raymond was the highlight!! He was very informative and fun to learn from! And the food was delicious! Will definitely do this again!

Experience was great. The chef, facilities and staff were very nice. Food was excellent. However, I wish we would have been more involved into cooking. Many times we had to watch the chef cook for us, and the dessert was 100% made by the chef. We also did not get the recipes.

A local teaches you how his grandma cooked. I am already using his knife tips. I learned to make a dark roux for shrimp etoufee. We made jambalaya with authentic andouille sausage. For dessert, he prepared banana foster flambe. I can now make my own etouffe at home. He was a patient helpful teacher and an excellent chef.
