The first thing we will do is cook our own sauce for our authentic Oaxacan breakfast. Then we will know the organic ingredients that we will use in our recipe; We will make a toast with mezcal to start the cooking class, and that our food is very tasty.
The mole, tamale or dish that you choose to prepare will be the one that you will carry in your heart and you will learn how to do it from the beginning to the end.
Do not forget that you will be involved in all the processes so that you know the cultural meaning of each one, you will learn to make tortillas by hand and put them on the comal so come ready to participate and eat!
After that now if at the table, we will eat together what we prepare.
Traditional cuisine in Oaxaca is a cultural heritage and I will share with you the experience of visiting my house so that you can live a totally traditional experience. Come prepared to enjoy!

Mimi and Charlie were such gracious and warm hosts. They’ve made us feel like we’re a part of their family, they’ve educated us about Oaxacan cuisine, why they do the things they do and how it relates to their culture and traditions. Mimi taught us how to cook amazing Oaxacan dishes from scratch, it was so informative, fun and very interactive. We definitely recommend every partaking in this class. Such an amazing experience!

The experience was a joy from start to finish. Mimi was a warm, funny and engaging host, Charlie was a great translator and very thoughtful, and the food was fantastic. We were involved in all aspects of the cooking and learned a lot. We highly recommend this heartwarming and educational experience!

Mimi is a Oaxacan treasure and I cannot recommend her cooking class more! If you have one day to experience what Oaxaca is all about, this is how you should spend half of it. Mimi (her son Charlie, and the rest of the family) could not have been more humble and welcoming in making us feel at home in her kitchen. We had a group of 12 strangers from all over the world, and by end of the day we were laughing and crying like we were family. For me, traveling is about immersing yourself into the culture, making a meaningful connection to a place, and creating a lasting memory that extends past an Instagram photo. When we left Mimi's, it was like leaving a small piece of our heart in Matadamas. We made some damn good food, too. Can't wait to be back!

Every detail of this jam-packed day was perfectly planned for hands-on education and lots of fun! Breakfast and lunch included. We prepared fresh salsa, tortillas, mole negro and the best tamales.

Mimi’s class was outstanding and a highlight of our trip- my first to Oaxaca. Her son Charley translated so there were no misunderstandings. We met folks from all over the world, even 2 from my neighborhood in San Francisco! The food was delicious. We made traditional mole, an involved process, cooking over wood coals. But, the success of this class is Mimi herself. She has so much personality and she stars as a master cook and teacher! Highly recommend this class.

This class was so well organised. We were made to feel welcome from our arrival. Around 18 participants but Mimi and her son quickly remembered all our names. So many highlights! Highly recommend this experience.
